Every October, garlic prices spike as Desi season ends and Chinese imports haven't arrived yet. The 3–4 week import lead time creates a predictable supply gap. Smart buyers lock in October–December requirements by September 15 — either as stored Desi stock or pre-booked Chinese garlic.

Pakistan's three provincial clusters (Sindh, Balochistan, Punjab+KPK) harvest at different times. Buyers who only know one supplier face gaps; buyers who understand the cluster system always have supply. Ask your supplier which province they're currently sourcing from — it directly affects price and freshness.

Winter-harvested jaggery (October–March) has the best aroma and hardness. Summer jaggery is stored stock — quality depends entirely on storage conditions. If your supplier can't tell you where their summer jaggery is stored, that's a quality risk. Quetta's cooler climate is the standard for professional summer storage.

Any supplier who claims year-round coriander supply but can't tell you where summer stock comes from is giving you market coriander — not farm-fresh. Genuine summer coriander supply requires Khushab District sourcing. Ask specifically where July coriander is sourced before placing a long-term supply agreement.

For processed food manufacturers, buying on price alone without specifying grade creates quality variance in your finished product. Always specify: garlic clove size, onion diameter, chilli variety (Sanam vs Dandicut), jaggery grade (Zero to Super Special). Price comparison only makes sense between identical specifications.

Fresh produce prices can move 40–80% within a single month during transition seasons. Buyers who maintain 30 days of buffer inventory never pay spot-price premiums. The storage cost is consistently lower than the price premium during supply gaps. For garlic processors especially, pre-season stocking is standard practice.
